Who said eating healthy had to be bland?  Not for this girl!  What is better than a stir fry loaded with healthy and colorful summer veggies and brown rice.  

What You Need:

  • 16 oz bag of frozen green beans
  • 16 oz bag of frozen broccoli (fresh can also be used, I was just out)
  • 1 summer squash, rough chopped
  • 1 zucchini, rough chopped
  • 1 red onion, rough chopped
  • 1 green pepper, rough chopped
  • small can of mushrooms (fresh can also be used)
  • 1/2 cup baby carrots, rough chopped
  • 2 tbsp minced garlic
  • 1/2 cup Kraft Asian Sesame Dressing
  • 1/4 cup soy sauce
  • 1 tsp sriracha hot sauce (optional)
  • pepper to taste

What You Do:

  • Heat the dressing and soy sauce in a skillet;
  • Saute the peppers, onion, carrots and garlic until slightly transparent;
  • Pour in the frozen beans and broccoli and combine; (you can also cook these slightly in the microwave if in a hurry)
  • Add in the squash and zucchini and continue to cook until all vegetables are slightly soft;
  • Season with a dash of pepper and drizzle with sriracha sauce;
  • Serve over brown rice and ENJOY!

This was a deliciously tasty and I felt good about eating it.
