I understand this is a bit of an oxymoron, but we love Taco Tuesday at my house and we love us some America.  So, I decided to be a bit patriotic with our south of the border meal this week.  I introduce to you...

American Flag Taco Salad!

This is a super easy way to get your Littles to eat their veggies as well as celebrate our great Country and also enjoy the cuisine of another.

What You Need:

  • A bag of round tortilla chips
  • 1 lb of ground beef 
  • 1 taco packet
  • 2/3 cups water
  • 2 cups shredded Mexican style cheese (I used cheddar here because it was all I had)
  • 1 cup cherry tomatoes
  • 3 cups shredded lettuce
  • 1/4 sliced and pitted black olives

What You Do:

  • Line a 9 x 13 pan with the round tortilla chips standing them up on the sides;
  • Brown the ground beef in a skillet and then add the taco packet and water as directed on the packet. Mix until completely combined;
  • Pour meat mixture evenly over the chips;
  • Evenly spread the shredded lettuce over the meat layer;
  • Place the cherry tomatoes down over the lettuce forming a square box in the top left hand corner of the dish.  Also, place the tomatoes in lines over the lettuce to form a stripe;
  • Sprinkle the cheese in between the lines of the tomatoes forming the other stripes;
  • Place the olives in the box you made in the top left corner of the dish to serve as stars;
  • Serve with sour cream, guacamole and salsa;
  • ENJOY!

Make this dish for your family this week.  I promise they will love it.  You will feel good that they are eating their veggies and you are also celebrating your wonderful Country!  This would also be a great appetizer at your July 4th cookout this weekend.

    1. Oh I am so excited! It was delicious! I know they will enjoy it. You could also put a layer of sour cream, but my Littles would in no way have that...LOL.
